Soya Chunks Ularthiyathu

Lent and advent are two times of the year that we try too many recipes. Because feeding pure non veg family, vegetarian food alone for those number of days is a difficult thing. Soya chunks is one thing that remains in stock during this time. Nutritious and similar in taste to chicken/meat makes them a hit at home.

Soya chunks ularthiyathu is so simple. I have used a some what similar recipe as that of beef ularthiyathu, but this soya chunks ularthiyathu is half the effort and mess that is created by beef. So why don't you too try it. It goes perfect with chapathi or rice. Don't forget to make additional chapathi or rice. Because I know it is gonna be a hit and they would eat more than usual :).




Ingredients
  1. 1 1/2 cup of soya chunks, soaked in warm water for 30 minutes
  2. 1 cup of sliced red onions
  3. 1 1/2 tsp of ginger garlic paste
  4. 1 tomato, finely chopped
  5. 1 tsp of fennel seeds
  6. 1 tsp of coriander powder
  7. 1/2 tsp of red chilly powder
  8. 1/4 tsp of turmeric powder
  9. 1/2 tsp of pepper powder
  10. 1/2 tsp of garam masala
  11. 1 strand of curry leaves
  12. 2 tbsp of cooking oil
  13. Salt to taste

Method
  • Cook the soaked soya chunks in water and salt for about 5-6 minutes. Remove it and rinse it in cold water and squeeze out excess water from them. To it add the ingredients 6-8 and mix well. 
  • In a pan, add the cooking oil. Once hot, add the sliced onion, ginger garlic paste, curry leaves and salt. Stir it well and turn down the heat to medium. Let it cook untill the onion turn tender. To it add the tomatoes and continue to cook untill the tomatoes disappear.
  • To it add the garam masala and stir well. Add the marinated soya chunks, 2 tbsp of water and sprinkle pepper powder on it. Mix it all well.
  • Continue to cook it for about 10 minutes on low flame , stirring it well needed. Turn down the heat.
  • Serve it with hot chapathis or rice.
Tips
  1. You don't have to cook for longer if you don't need to have more dry version of it. 
  2. You could choose to add in some coconut pieces too.
