White chocolate cheesecake with berry sauce


Cheesecake, the combination of richness, sweetness and slightly tangy taste, it's a kind of sinfully dessert for some people.





For me I love all of them (even the fat from it, haha),  or you can say that I love cheesecake. Well, I'm not the people who turn to low fat one when eating something that I like. It's just my way of living, I choose to eat delicious thing in small amount rather than have less fat (or low calorie) with less deliciousness too ^^". Plus most of low fat food contains more chemical ingredients than original one too. Anyway I'm not here to talk about the food science so we will stop here.
Because today, it's my favorite cheesecake with my favorite ingredient: white chocolate!
When taking about white chocolate, you may think that this cheesecake must be very sweet, but after having a piece of this one, you might change your opinion. As this cake gives you more than that, well esp. when you serve it with the berry sauce. 
When baking this cake, the point is you don't have to bake it until fully set, just let the heat in the oven and in the cake itself sets the cake slowly, and you will be rewarded with moist and creamy texture cheesecake.

White chocolate cheesecake with berry sauce
Makes 18 cm cake



Base
90 g .............................. Digestive biscuits
30 g .............................. Walnut or pecan nut
50 g .............................. Melted Unsalted butter

Cheesecake
250 g ............................ White chocolate
250 g ............................ Cream cheese
1/8 tsp .......................... Salt
1/2 tsp .......................... Vanilla extract
2 ................................... Eggs
130 g ............................ Whipping cream
4 tsp ............................. Lemon juice
50 g .............................. White chocolate chips

Berry sauce
130 g ............................ Raspberry puree
50 g .............................. Granulated sugar
110 g ............................. Fresh berries (choose the kinds you like)
1/2 tbsp ........................ Lemon juice






Preheat an oven to 170℃  
Line 18 cm cake pan with baking paper.


 Put biscuits and nuts into a plastic bag.


 Crush into fine crumbs with a rolling pin.


 Mix with melted butter.


Pour into the prepared pan and level the top.
Refrigerate until ready to use.

 Put white chocolate into a microwavable bowl, heat in the microwave (600W) for 1.30 to 2 minutes, stir until fully melt and set aside.


 Beat the cream cheese until smooth.
Mix salt, vanilla extract and egg into the bowl.


 Pour melted white chocolate into the bowl, and stir to combine.


 Pour whipping cream and lemon juice into the bowl.


 Beat to combine.


 Stir in the white chocolate chips.



Pour into the prepared pan.
Bake for 40-50 minutes.



Turn off the oven,



Slightly open the oven door.
Leave cake in the oven for 30 minutes.



Remove from the oven and let it cool completely on a wire rack.
Cover and refrigerate overnight.


 Put raspberry puree, sugar, fresh berries and lemon juice into a saucepan.


 Place over low heat, until fully boil.


 Let it cool completely before using.


Cut cake into pieces, pour the sauce over the cake before serving.
