Coffee spritz cookies
My life's just getting back on track this week, haha.
Well, there are so many things that we have to do (esp. work), and I think that I'm lucky enough to have time to do something I love at the same time. The only problem for me is I have too many hobbies, haha. Lately, I spend most of my time reading, (I just subscribed for Amazon kindle unlimited, it's good if you love to read, but beware that you will stop doing anything else just like me -*-).
But don't worry, baking, cooking and taking photos of delicious things are still what I can't stop doing, so you will find new recipes in my blog for sure ^ ^. And today is another easy cookie recipe.
Actually, if you don't use coffee granules and add a drop of vanilla extract, it will be plain spritz cookies. The method is easy and straight forward, just mixing it and piping it, that's all. You can make smaller cookies by using a smaller piping tip to pipe the cookie dough, anyway, if you make smaller size cookies it will require less baking time.

1/2 tsp ........................ Instant coffee granules
1/2 tsp ........................ Hot water
75 g ............................ Unsalted butter
.................................... Pinch of Salt
40 g ............................ Icing sugar
1 ................................. Egg yolk
90 g ............................ Cake Flour
5 g .............................. Corn starch
Preheat an oven to 180℃
Line a baking sheet with baking paper.
Mix the instant coffee granules and hot water together, set aside.
Beat the butter with salt until softened, add the icing sugar and beat until combined.
Add the coffee mixture and egg yolk, mix to combine.
Pour the cake flour and corn starch into the bowl.
Stir with a spatula until combined.
Put into a piping bag fitted with 1 cm star nozzle.
Pipe onto the prepared baking sheet.
You will get 10-11 pieces.
Bake for 15-18 minutes or until golden brown.
Ready to enjoy ^^.
