Marble cake (No butter - No egg)
I have never tried eggless cakes before. When I came across this recipe, I was so glad to have found something which is butterless and eggless. I had to give it a try.
Now it being the lent season, I finally tried it. These were good and did serve well to calm down our craving to have cakes during lent. They definitely do differ from cakes that include eggs, taste wise and texture wise. But if you don't eat eggs or are on a diet, then this recipe is something that you must try. The guilt of stuffing up too much calories keeps me away from having multiple pieces of cakes at one go. But this cake being butterless too did vanish from my snack box in no time. Here is the recipe for this cake.

For Vanilla batter
- 3/4 cup + 2tbsp of all purpose flour
- 1/2 cup of sugar
- 1/2 tsp of baking soda
- 1/4 tsp of salt
- 1/2 cup of hot water
- 1/2 tbsp of vinegar
- 1/4 tbsp of vanilla extract
- 6 tbsp of oil
- 3/4 cup of all purpose flour
- 2 tbsp of dark cocoa powder
- 1/2 cup of sugar
- 1/2 tsp of baking soda
- 1/4 tsp of salt
- 1 tsp of coffee granules
- 1/2 cup of hot water
- 1/2 tbsp fo vinegar
- 1/4 tbsp of vanilla extract
- 6 tbsp of oil
Making of vanilla batter
- In a bowl, take the ingredients 1-4. Give it a mix so that the ingredients get spread evenly.
- In another bowl, take the ingredients 5-8. Mix it well.
- Now add the wet ingredients to the dry ingredients as you mix it. Give it a thorough mix untill everything gets incorporated well.
Making of chocolate batter
- In a bowl, take the ingredients 1-5. Give it a mix so that the ingredients get spread evenly.
- In another bowl, take the hot water and add coffee granules to it. Stir to help the coffee granules dissolve in it. To it, add ingredients 8-10. Mix it well.
- Now add the wet ingredients to the dry ingredients as you mix it. Give it a thorough mix untill everything gets incorporated well.
Forming the marble pattern
- In a greased baking pan, pour half of the vanilla batter followed by half of the chocolate batter. Pour the remaining half of vanilla batter and followed by remaining half of chocolate batter. Swirl the batter with a cake knife to create a marble effect.
- Preheat the oven to 350 F / 180 C and bake it for 35-40 minutes or untill a toothpick inserted comes out clean. Remove it from the oven and let it stand in the baking pan for another 10 minutes before you transfer the cake onto a cooking rack.
Tips
- Use dark cocoa powder to achieve the dark swirls in the cake.
- The original recipe calls in for a frosting to go with it. However, we like to have them plain. You could frost the cake if you wish to.
